For many people, lockdown has been a time where we could get creative and set-up that business that we have always wanted to. That’s what husband and wife time, Jay and Angela, did and created jayspizzaproject. A takeaway Neapolitan style pizza that is a huge hit in Kippax, Leeds. All based from his back garden, Jay uses fresh ingredients to create mouth-watering pizza that is proving hugely popular with locals.
Wine & Dine Yorkshire had a chat with owner, Jay, to find out more about the business and what their plans are for the future.
How did the idea come about?
I’ve started experimenting with pizza 20 years ago. Through the years I was adjusting my recipe and trying different technics. For a long time, I was more into NY style pizza. Only about 3 years ago I decided to work on Neapolitan style. Trying different flours, yeast, hydration. I was still using home oven only at that time. My wife was watching me experimenting and was my tester and critic. She decided at some point that I should be able to show my full potential and got me my birthday present a bit sooner. It was portable wood fired pizza oven. It changed everything! I cooked for neighbours and friends first. Eventually we decided to feed local people in Kippax and surrounding area.
Who are the faces behind the business?
Our team is super small. Just me and my wife Angela. I make pizza and look after cooking side of the project while my wife is looking after me and children.
What makes you stand out?
I believe there is not many pizza takeaways in the area offering Neapolitan style pizza. One of the reasons could be the fact that is more time consuming. From kneading to putting pizza in the oven there usually is 24h of fermentation. The other factor is quality of ingredients. Italian “00” flours and San Marzano tomatoes are a must when it comes to this style of pizza. We don’t use any frozen ingredients; everything is fresh and prepared each weekend.
How can people place an order?
We are based in Kippax. You can find us on FB and Instagram. Have a look at our little menu and send us direct message with your order and time you prefer. We operate on Fridays (5-7) and Saturdays (4-8). It’s collection only at present.
How has lockdown affected the business?
As we only started during pandemic, I can’t say that lockdown affects our project in any way. The fact that we operate from home has a bit off putting for some people at first. We ensured everyone that we are registered food business with all required training and insurance.
