From finding wild garlic on a walk to becoming a fine dining takeaway! – byMolly is becoming a growing success in and around Leeds

Since the first lockdown back in March 2020, many people from the hospitality industry have found themselves with a lot more free time due to pubs and restaurants being forced to close for majority of the past year. So many people have decided to put their skills to use and launch their own business baking or cooking and offering a takeaway service.

However, byMolly stands out from the rest! Multi-award winning, home grown Leeds chef Molly Payne creates classic, fresh, meals, soups roasts and desserts that can all be delivered straight to your front door.
Wine & Dine Yorkshire caught up with Molly to find out more about her latest venture, byMolly.

Molly, 24, from Leeds, is a huge Leeds United fan and Managing Director of byMolly. Molly’s passion for food started early in life, spending most of her time in the kitchen helping her Auntie Moira. Auntie Moira’s Yorkshire pudding recipe is still used by Molly today!

At the age of 12, Molly began her journey to becoming a chef by writing a letter to the owner of a successful French bistro asking for work experience, he kindly offered, and Molly ended up working there for almost 10 years. Working her way up through the ranks, Molly ended up as Head Chef by age 19. At only 20 years olds, she was the youngest and only female recipient of the Oliver Award for Best Chef in 2017. Since this, Molly has worked in several fine dining establishments across the North, earning two Rosette awards throughout.

How did the idea come about?

When the first lockdown was announced in March last year – it was the first time in most of my life I found myself not working. A few days in, I must have deep cleaned my entire studio flat about seven times and began climbing the walls incredibly early on. To blow the cobwebs away I went for a walk to Roundhay Park with my partner Charlotte, where we discovered masses of wild garlic growing along the banks. We foraged a bunch and took it home where I created some wild garlic butter and pesto. This grew into something we did often and delivered to our family members to try – after a while they had to tell us to stop bring them food as it wasn’t fitting in their fridges there was so much!

Why did you decide to launch?

This is where our idea for byMolly began! We started with just a few products and a couple of soups and away we went! We loved the idea of creating delicious, nutritious fresh food for a lot of our families that were key workers and often didn’t have time to cook for themselves.
Since we began, we have grown to creating and delivering Sunday roasts, three-course experiences including our famous beef wellington and Christmas dinners. We’re about to launch our brand new concept too – private chef dining experiences in the comfort of your own home!

What is your proudest achievement?

Honestly we couldn’t pick just a single moment or achievement; we’d have to say the experience of our entire journey so far. We have to pinch ourselves often due to the glowing feedback we receive and sometimes we can barely believe what we’ve created!

If we absolutely had to pinpoint something specific, we’d probably say our Christmas, NYE & Valentine’s menus all selling out. When we began our journey we’d get so excited if someone ordered 3/4 soups from us, and that feeling is just times a million when we reach full capacity for our special occasion menus.

What is your favourite dish?

What a question! To pick just one seems impossible! My favourite would be one that’s part of our new private dining concept – pan fried scallops, roasted cauliflower puree, crispy parma ham and parma ham dust. Charlotte’s says after a lot of deliberation there’s no way she couldn’t pick our beef wellington, with dauphinoise potatoes, buttered vegetables and bourguignon sauce.
Our joint favourite is our classic Sunday roast. We always make sure we make an extra couple of portions for ourselves after a hectic Sunday shift – it’s the highlight of our week!

How can people order?
We have a website – where you can order all our different menus for delivery on selected days throughout the week. We’re also on Facebook (@bymollyfb) and Instagram (_bymollyinsta) where we’re available to chat or ask questions, we also take orders through DM too.

Where do you deliver to?

An important part of our business is that we deliver to every LS postcode – we’d never want anyone to feel like they’re missing out just based on the area they live in. We also deliver to WF1, WF2, WF3 and some BD postcodes too – though these you’ll have to get in touch directly to organise.

How did COVID affect your business?

Our business was born during COVID – so all we know really is how to operate through lockdowns and adapt to how the world is changing around us. We see how it is affecting the hospitality industry around the UK and we count ourselves very lucky that we’ve experienced the growth that we have, and hope that we continue to grow well into the future.

What are your plans for the future?

We’re super excited about the launch of our new private chef dining experience – we’ll be offering an incredible package of fine dining food, at home dining experiences and made to order cocktails. We’re already taking bookings for later on in the year when friends and families will be reuniting after so long apart – no one wants to be stood over an oven or barbecue when there’s catching up to do!

We love being able to spend every day together, building something that we’re so passionate about and hopefully becoming a household name in Leeds and West Yorkshire.
