700ml good quality gin (we love Hendrick’s).
400g British strawberries.
100g caster sugar.
1. Sterilise a 1.5 litre Kilner jar.
2. Mix the gin with the strawberries and caster sugar in a large bowl and pour into the jar.
3. Put in the fridge and stir every two days for three weeks.
4. Strain through a muslin cloth to remove any seeds before serving over ice with tonic, or get creative with cocktails!
